Job Description
Our Chef De Partie is the leader of our local culinary team and responsible for overall execution of well-crafted American comfort food, including signature hamburgers, hotdogs, bar bites, deserts, and other menu items to our international standards.
• You will be responsible for all food preparation, service, and kitchen management, quality standards, recruiting, managing and mentoring junior team members, ensuring compliance with HACCP and all local health and safety standards, operational and financial management of kitchen resources, including personnel, purchasing, inventory, wastage, daily stock taking, and other required tasks.
• This is a fast-paced environment that demands attention to detail, a high degree of teamwork, flexibility, willingness to help other team members (including those in other areas of the Group, when necessary), the ability to multitask, and familiarity and comfort using international-level point-of-sale (POS) systems.
• There will also be opportunities for professional growth and development as you train with our franchise owners from Singapore and have the chance to innovate and develop your own recipes with guidance, specifically for seasonal menus.
• An understanding of craft beer flavors, appreciation for the taste, and excitement to cook with and pair food and beers together is a must.
• This role reports directly to the Taproom General Manager / Group Director Of Operations and involves working collaboratively and closely with the Taproom team and rest of our internal team members, Phat Burger Bro. partners, and external partners, including vendors, wholesale customers, and finance and HR consultants.

Job Requirement
As passionate about food and flavors as we are about beer (it also helps if you’re passionate about beer)
• 2+ years of experience as a Chef De Partie or other similar senior role
• Openness and willingness to learn new techniques (e.g. cooking with beer)
• Comfortable cooking Western cuisine and willingness to experiment to localize food to suit the Vietnamese pallet
• High attention to detail and a focus on quality and consistency
• Ability to multitask and prioritize effectively in a high-pressure environment while maintaining calmness, composure and a sense of humor
• Ability to think on your feet and adapt to changing situations while maintaining the highest quality of offering and other established standards
• Flexibility with schedule requirements
• Responsible for daily food preparation and service
• Maintain a food cost of 25% or less
• Develop menu items in conjunction with the Taproom General Manager, and other Group Senior Management
• Enforce proper food safety levels and maintain SOP’s and regulations
• Use and maintain our POS and other computer systems to manage par levels, ordering ingredients accordingly and maintain a full inventory including opening/closing and wastage
• Compile monthly food sales, inventory, and other key reports from our systems
• Recruit, train, and develop junior staff members
• Kitchen team scheduling
• Manage purchasing, including sourcing for the best value ingredients, negotiating with vendor partners, and ensuring operational and financial accuracy
• Innovative and experimental
• Plugged into local culture, tastes, trends and preferences, while also aware of global happenings.
• Proud of their craft and relentlessly focused on quality
• Charismatic and cordial with a genuine desire to grow
• Commercially-minded and able to create a financially feasible food menu and manage all kitchen-related admin as well as excel in producing a high level of food
• Fluency in both English and Vietnamese
